The fake/draft app interfaces are called prototypes. There are a lot of tools available which let you create prototypes for your apps. They differ from offering realistic user interface elements to just uploading sketches you have made. Which tool you decide to use depends on how realistic/primitive you want your prototype to look.

You can use a tool like Xiffe* to prototype your iOS apps.
